Coffee-Rubbed Slow Cooked Brisket

Toss 3 thinly sliced Onions with 1 Tbsp Olive Oil and 1/2 tsp. Kosher Salt in a roasting pan.  In a small bowl, combine 3 Tbsp Ground Coffee, 3 Tbsp packed Dark Brown Sugar, 1 Tbsp kosher salt, 1 1/2 Tsp Smoked Paprika, 1/2 Tsp Garlic Powder, 1/2 Tsp Cayenne Pepper and a generous pinch of Black Pepper.  Generously coat a 4 Pound Brisket all over with rub.  Cover roasting pan with lid or foil tightly.  Bake at 300 degrees for 3 hrs 30 min.  Uncover pan and cook 30 mins. longer or until browned.  Transfer to board or serving platter and let rest 15 mins.  Place roasting pan with juices on stove burner and turn heat to medium-high.  Add the onions and simmer stirring occasionally until slightly thickened.  Slice Brisket and serve with pan juices and onions.   This recipe was submitted to us by our customer; Maureen.
